Mama Bea's Story
Mama Bea’s Chicken Salad began with, Beatrice Stackhouse Logan. She was a humble woman of God, mother, grandmother, sister, friend, as well as talented, creative quilter and baker. She also crafted what we called “the perfect chicken salad” for more than 40 years. Mother’s family and friends asked her to make it for EVERY occasion. It was made for so many parties, church socials and just because events that you couldn’t begin to count them all. Everyone that had the pleasure of getting her to make it would say, “OMG, this is the best chicken salad I ever tasted”. At one point she had made so much chicken salad that she looked at us and said “I am going to cluck if I have to make one more batch of chicken salad”. We just laughed and of course asked her to make more when the next occasion arrived. We had always told Mother that her chicken salad should be sold in stores but she didn’t understand all the fuss over chicken salad. She knew it was good but being a humble woman she thought we were just dreaming about it being in stores. She started packaging the chicken salad in mason jars, adding ribbon and gifting it to the happy recipients. This made it fun for her.
Mama Bea’s chicken salad has always been and continues to be made with premium ingredients. It is prepared with fresh perfectly seasoned boneless/skinless chicken breast cooked to tender perfection and of course ONLY Duke’s mayonnaise.
Our mother transitioned and became our angel in heaven in late 2010. All these years later I have family and friends still talking about Mother’s beautiful spirit and the delicious chicken salad. She was compassionate, loving and kind to all that she met. She never met a stranger and always had a kind word and beautiful smile. She will be with us forever and she will never be forgotten. She lives on in our hearts and we honor her by taking her chicken salad recipe and sharing it with the rest of the world. Giving Back
Mama Bea had a special fondness for helping and giving to others, especially young people. Every year she purchased and gave out school supplies to all of the children and teens at her church, as well as nieces, nephews and grandchildren. She wanted every young person to have all the supplies they needed each year. She knew school supplies could be a burden on some parents because she had been one of those parents. After working so many years at the local Health-tex textile plant sewing children’s clothes she knew what it meant to work to pay bills and help support the family. After retiring she continued her ministry in giving to others that walked the same path she had. We continue her ministry of giving.
We looked at several charities that we felt Mama Bea would have supported. We have chosen to give a portion of sales to “I AM VOICES”, a 501(c)(3) that helps young ladies that have been victims of sexual violence. I AM VOICES provides a safe space for survivors to get the help they need and was named in honor of every survivor silenced and/or afraid to speak their truth. They are especially concerned with girls and teens in the foster care system. They embrace and prove continued support for survivors who are in the need of education, life skills and mental support. They wish to erase the narrative of sexual violence in all its forms – rape, abuse, and sex trafficking. This organization strives in doing the things that uplift these young ladies to elevate themselves above their circumstances and set them on a path for success.
